So, I watched The Greatest Showman for the first time ever on Wednesday. And now I have the whole soundtrack memorized because I have listened to nothing else for the past four days. I am obsessed, you guys. The dance numbers, the cute story, the beautiful music, it’s all just so damn feel good.
Speaking of feel good. This recipe is bound to make you feel all the good feelings, and at the beginning of your day, no less!
Because there’s no added sugar, it’s as filling as it is yummy, and it’s technically whole30 approved (as long as cacao or chia or pudding-like breakfasts don’t send you spiraling!)
During whole30 my breakfasts always err on the savory side. No complaints, because I could eat variations of eggs and bacon forever. But sometimes I can get a little bored. More importantly, occasionally I want to meal prep something the night before that I can just grab and eat on the way to work. Runny eggs aren’t really a great candidate for that. These are!
And when I’m not on whole30, this is such a good dessert alternative!
Cacao Chia Pudding Parfaits
2 cups almond milk
1/2 cup chia seeds
1 tbsp cacao powder
2 tbsp date syrup
1 tsp salt
cacao nibs and banana slices for garnish
Mix almond milk, cacao powder, date syrup, and salt together in a food processor. Add chia seeds and pulse once so well combined. Pour the mixture evenly into several parfait jars.
Set the parfait jars in the fridge and allow to cool and set overnight.
In the morning, grab a jar and top with banana slices and cacao nibs. Enjoy immediately!
