Radish and Goat Cheese Muffins 

Remember when I mentioned in a previous post that I got inspired to make a new recipe with radishes?

Let me introduce you to these savory muffins made with radishes and goat cheese! Sounds kind of nasty, right? Well they aren’t. I’m actually pretty obsessed with them.

I got this pretty bunch of radishes from the farmer’s market and I go into (excruciating?) detail here. I also picked up some goat cheese whilst at the market and kinda wanted to do something together with the two. I did some research and found this recipe.

With a kitchenaid it was pretty simple. And honestly the muffins are really good. I froze most of mine because I think they’ll be awesome additions to the Easter brunch I’m hoping to prepare. But I’ve also been sneaking one at breakfast here and there with a side of eggs and let me tell ya, I DO NOT HATE IT. 🙂

So here’s what you need:

  • 7 tablespoons unsalted butter
  • 2 cups flour
  • 2 tsp baking
  • 1/2 tsp baking soda
  • 2 tsp salt
  • 1 tsp garlic powder
  • 2 large eggs
  • 1 1/4 cups buttermilk
  • 1 tsp garlic powder

  • 1 1/4 cups buttermilk
  • 2 cups chopped radishes
  • 4 ounces of goat cheese

And here’s what you do:

  1. Preheat oven to 375 and line muffin pan with papers.
  2. Mix all dry ingredients together (excluding the goat cheese and radishes). In a separate bowl, mix wet ingredients together but only use 5 tablespoons of butter. Combine the two bowls. Honestly I hate doing this and genuinely believe it does nothing but dirty more dishes. But you might like the rules so…
  3. Add almost all the radishes and mix until well incorporated.
  4. Fill each muffin cup 3/4ths full with batter. Once all batter is used top each cup with a few pieces of radish and a dab of butter.
  5. Place in oven and bake for 20-25 minutes. Let cool completely and then CHOW DOWN.

Hope you’re all having fun gearing up for Easter! I’ve been trying so hard to control myself with the cadbury eggs this year…to no avail. Oh well.
