Happy Pi Day!
Have you ever found yourself wanting both a Caeser salad and a pizza and can’t decide which to go with..? Okay. Maybe not, but that actually happens to me more often than I care to admit. So I decided to do something about it and ta-da! Out of the oven came a special type of pie for this year’s pi day…the Caeser Salad Pizza!
I started with making the dough. With my amazing Kitchenaid, I mixed together 1 & 3/4th cups flour, 1 & 1/2 teaspoons sugar, 1 packet of pizza dough yeast, 3/th teaspoon salt, 2/3rd cup warm water, and 3 tablespoons of oil with a dough hook for 3 minutes. Pizza dough is different than other dough in that it’s stickier and stretchier. In other words, you need not want flour on your hands and surfaces ’cause shit can get real, quick. My roommates and I had a good time trying to throw the pizza in air like the pros! I’m ridiculously bad at it, probably because of my lack of hand-eye coordination. This amount of dough makes 3 generously-sized personal pizzas. For the pigs in us all.
While an oven was preheating to 450, I put Cardini’s Caeser dressing on the middle of the pizza in leau of regular pizza sauce. It’s up to you how much you want, but in my opinion less is more. Too much makes the pizza soggy and oily, while underestimating the sauce ratio actually gets good flavor in without affecting the texture. I sprinkled on a generous helping of parmigiano-reggiano cheese, making sure to get some on the outer edges of the crust as well. Then I chopped up some tomatoes and sprinkled them over everything. I baked the pizza until it was puffy and a little crispy, maybe 15-20 minutes. Then, I topped that bad boy with some chopped romaine, cubed avocado, and chopped green onions. Think caeser salad on one big crouton.
I’m pretty happy with how it turned out. Then again, I’m pretty much convinced you can can slap anything on a huge ball of dough and have it be awesome.
