I don’t know about you, but I think popsicles are one of the best, most underrated desserts in the world. Don’t agree? Let me break it down for you: First of all, they’re crazy refreshing, especially in these hot summer months. They can range from chocolatey-indulgent-yumminess to fruity-fresh (all of which rock). They come in fun colors, shapes, and sizes which make them really fun to use for themed summer parties. And is there anything, I mean anything, cuter than a little kid eating (or failing to eat) a popsicle?! Nope. Plus, for me they always bring about very vivid memories of childhood summers spent at the lake/pool.
So, I’ve been craving some “pops” lately and when I saw these at Swoozies the other week, I couldn’t resist snatching them up. I’ve been trying to follow the Tone It Up diet plan this summer (to lose the 20 pounds college was kind enough to give me), and I was SO happy when I saw they had almost a dozen approved popsicle recipes, all of which looked better than the last. Today, I put one of the recipes to the test.
I chose a watermelon + honey pop recipe, and just look how pretty they turned out! They tasted even better. Plus it was just about the easiest thing I’ve ever done. Puree some watermelon, add some honey to taste. No measurements (or messes), and it took about 45 seconds. Then you just pour those bad boys, let ’em freeze, and pull out the pops! They’re drippy, but only the best popsicles are amirite?!
